What you’ll need

  • 2 lbs. ground beef, lamb, or a mixture of both
  • 2 onions, peeled and grated
  • 1 clove garlic, minced
  • 1/4 cup fresh cilantro, minced
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground allspice
  • 1/4 tsp. cayenne pepper
  • 2 tsp. salt
  • 1 large egg, beaten

How to make it

  1. Mix the ground meat thoroughly with the onion, garlic and cilantro until well-combined. Add spices, salt and pepper and knead with your hands for four or five minutes until mixture is very soft and smooth. Add beaten egg and mix until well-combined.

  2. Moisten hands with water and form meat into long sausage shapes around six metal skewers.

  3. Heat the grill or preheat the broiler. When charcoal has ashed over and is ready for cooking, oil the grid (or broiler pan) and cook skewers over medium coals (or under a hot broiler) for a few minutes. A kebob rack is ideal for this dish to prevent the meat from sticking to the grid and coming off the skewers. Turn and continue grilling on the other side until lightly browned. Kofta cooks quickly, so be careful not to overcook.

  4. Serve with grilled onions, red and green peppers and fresh sliced tomatoes accompanied by pita bread. Makes 4-6 servings.
