My cousin made this rice dish for me when I was visiting her in CT last week. She was inspired by a restaurant and I was inspired by her. I don’t know who to credit but I do know the dish has probably changed more than a little bit on the winding path from that restaurant to my kitchen.

Here’s what I did. Buy black rice from Whole Foods, steam it and then combine with sauteed mango (I used peaches, too), red onion slices with lime juice sprinkled on top to take the onion taste out, avocado chunks, cracked black pepper and a little bit more lime juice.  E-z. Fun. Different. Just what Summer should be. :)
